CREAM CHEESE CUPCAKES

2 (8 oz.) cream cheese, softened
3/4 c. sugar
1 tbsp. lemon juice
2 eggs
1 tsp. vanilla
Vanilla wafers
1 can cherry pie filling
Combine cream cheese, sugar, lemon juice and
vanilla. Add eggs and beat for 5 minutes. Line small
cupcake pans with paper liners. Put vanilla wafer in
bottom of each. Pour about 1 tablespoons cheesecake
mixture into each cup. Bake at 350 degrees 20-25
minutes or until cracks appear on tops. Remove from
oven and cool. They will fall. Drop teaspoon of pie
filling onto top of each cooled cheesecake.
